I organically grow my tabasco peppers on my la petite ferm (farmette), fement them and then age for a while until i reach the flavor i'm looking for, then it's ready to be bottled.  It's a hot sauce made to go with food, not one of those blown out super hot pepper sauces.  My sauce is designed to work well with food and drink.  Each year offers a different flavor profile which makes for a good sauce to collect year after year.  Look for recipes on loose ends.
